Ah yes,......Pasta City! ;o)
I am loving and using this machine to the max.Pasta is a HUGE weakness for me, so in a 'carb hell' sense,I should probably take it easy,..... but I digress,.......The only few downfalls I can state about this machine is thatI only wish they would include more pasta wheels/dies.I also wish it would extrude the dough more completely. I have to open thetop cover a few times during a cycle to try to situate the last bit of dough to be extruded. The spinning / kneading arm does not pick up or gather all of the dough inside the main reservoir. You lose some dough because themachine can't extract it all. It gets caught up around the end of the kneading and/or pusher arm and it also gets jammed into a void/crevice in front of the pasta shape wheel die. Again, if you don't want to lose the substantial 10% of the dough that's left, you may have to gather the remaining dough with a smallrubber spatula and push it into the exit hole/area during the extraction phase. The machine stops (safety measure) when the top lid opens so you can do it safely.Other Helpful Tips :1. Use a very sharp small paring knife when cutting the pasta into desired lengths when it is being extruded. The spatula tool that they include with the machine is not sharp enough and just mashes and/or mangles the pasta.2. Use a cooking scale (grams) when measuring the dry and wet ingredients. Pasta is really an exact science much like baking. If you're just a little off it really can make a notable difference between success and failureI am as completely pleased with this purchased as I could possibly be.Clean up is an easy breezy dream too.It may be another machine or gadget in my kitchen taking up space, but it is wellworth it, and definitely not just sitting around. For the money I paid for it, it is big time worth it as well, because I actually use it, and enjoy it immensely.I have used all of the pasta wheels except for the lasagna or flat large pasta one. I'm looking forward to using that one in the future as well.I will also add that since I try to eat as cleanly as possible, so I primarily buy organic foods. I am able to control the recipes that I use when I make pasta.I only use organic flour and eggs. That's always a plus. ;o)

I got really lucky because Amazon listed the product at 50% off randomly one day, and I was able to snag this really good deal. You would have to make A LOT of pasta to break even if you pay full price on this, and we just don't eat that much pasta. It was extremely easy to set this up and make my first batch of pasta. The book tells you everything you need to know, and even has a bunch of recipes to make different varieties of pasta. I made lasagna noodles with this, and was very pleased with how it ended up. The raw pasta feels really soft, and the cooked pasta is not hard to handle. You know how sometimes people only partially cook the lasagna noodles and then bake it because they don't want to overcook the noodles? I didn't have to worry about overcooked noodles with this. The edges that were a little crisp (I like to do this on purpose, but I never get a good effect with store bought pasta) had an AMAZING texture, it kind of tasted like a crispy wonton without being greasy. It went very well with the meat sauce that spilled out the sides when you slice your lasagna :)

If you like pasta with store bought sauce, I'm not sure this is going to make a huge difference in your dinner. Honestly, store bought noodles are quite good these days and very cheap. However, if you prefer your pasta dressed very lightly with an olive oil-based dressing, THIS THING WILL CHANGE YOUR LIFE. If you love truffles like me, then you are in for an awesome treat. Doesn't even have to be fresh truffles- just buy some bottled black truffle carpaccio in olive oil, add a little more olive oil to it, and the whole thing in some fresh angel hair with salt and pepper. Another thing to try is an olive oil-based sauce using anchovies and a lot of garlic, maybe some white wine. Very clean tasting, the kind of meal where you can really savor every bite.

9/2/2016 update: I've used this thing a couple of times, and I still like it a lot. It is definitely a luxury item, and is not a commonly used tool in my kitchen but really fun to have when I'm in the mood for some really good pasta. I think my biggest recommendation is to NOT measure everything out by weight, per the instructions. Instead, go by volume (there are tutorials on YouTube for this). I know, it is so counter intuitive, but I've had to throw away entire batches of ingredients when I did it by weight. The problem is that you'll use too much water and the machine will just kneed and kneed but never extrude the pasta, and you end up with overworked dough. It is supposed to look dry when it comes out of the extruder, and not soft/moist like you expect it to. Once you cook it, it won't matter and it will taste delicious and have a perfect texture. I would recommend doubling the recipe if you are making lasagna, there is nothing more annoying than not having enough lasagna noodles. If you make extra you can always use the noodles to make ravioli!

This pasta machine works extremely well if you follow the directions. I weigh my flour rather than using measuring cups because the measurements need to be really precise. My kids always help me make these noodles because they love it. I was afraid it would be too much trouble but it takes me about the same amount of time to make pasta using this as it did with the packaged noodles because the fresh pasta cooks so much faster. Basically, I start the machine, get the water boiling, cut the noodles as they come out (usually my kids do this), then wash the machine parts during the few minutes that the noodles are cooking. Washing it up is so easy and fast. It's about 20 minutes total, which is about the same time it took me with dried noodles. I don't notice a huge difference in taste with the thinnest setting, but I definitely notice the taste difference with all the larger noodles. I got this as a Christmas present and thought it was kind of indulgent but we use it often enough, and it's so delicious, and it's a fun family activity.

I can make enough pasta for a family of 6, but none of us eats an enormous plate of pasta like some people do. We can get a reasonable serving. If you've got a teenage boy who's carb-loading, you'll probably have to run the cycle twice.

I found one low carb noodle recipe that worked pretty well for noodles, but in the end it turned out to work better for us to just use half and half zoodles and fresh wheat noodles. The machine is VERY picky about the exact texture of the mix that it's extruding - it just can't be too wet or too dry, so almost all the low carb recipes don't work in this.

After trying to make pasta manually by kneading the dough, I gave up after 10 minutes since the dough was not elastic enough to run through my previous hand crank machine. I had reached my frustration point. The Philips Pasta Maker to the rescue!

This great machine makes fresh pasta with a minimum of effort. Add flour, water and eggs and in as little as 8 minutes you've got pasta without all the hassle. Included with the machine are discs to make spaghetti, lasagna, penne and fetuccini. If you want to make unique pasta, there is a recipe book so you can add carrots, spinach and other varieties to make the pasta your own. If you want to make other shape pastas, Philips sells additional discs for this purpose.

I have only two complaints: (1) Item is overpriced and (2) Clean-up. Yes the Philips Pasta Maker is easy to clean, but you have to take out 4 separate parts for cleaning and then re-assemble it. Although the clean-up is easy and simple, it is time consuming. With my bread machine, for example, I only have to clean the paddle and bread pan and they take less than a minute.

If you are looking for an easy to use device to create fresh pasta, the Philips Pasta Maker is the best one on the market. Just don't expect to pick it up for cheap! You won't regret it.

5.0 out of 5 stars A winner, compared to other methods.
Reviewed in Canada on May 15, 2015
I have just received and tested this machine, and can compare it versus a number of other noodle-making alternatives. I have mostly positives, and a 5-star rating for the design, but some notes on the execution of the process.

The design is excellent -- a cut above -- and it is completely engineered and built for ease of use and clean operation. It is very well built, fast-to-use, and easy to clean. Noodle making is usually quite messy -- but this machine tames the time, effort and messiness.

Compared to a completely manual method (using a pasta roller-machine) it is without exaggeration about ten times easier to use. One thinks of it as a modern appliance, not a gimmick acquisition that cannot be fully part of a busy schedule.

Compared to other electric pasta makers (I had a CTC-X3000), it is extremely similar in process. For instance, both can get you making pasta in about two minutes. But Philips has overcome the flaws that are in a lesser machine.

o The Philips unit is built more solidly. It monitors the extrusion forces so that it will not destroy itself if the cook screws up. The Philips has a microcomputer guarding the extruder against over-stress, whereas my old CTC lets you know about that by simply breaking something. Overstress can happen in a number of ways, based on ingredients or blockages. However, some things that helped the CTC work well also helped this unit: Soaking the die for 1 or 2 minutes in hot water with a bit of vegetable oil actually does helps the extrusion get going. And also a teaspoon of olive oil in with the liquids does help as well, yielding smoother pasta.

o The Philips unit stores all its components internally. It is a neat appliance that you might leave on the counter for some time. (But then, who really has room for that?)

o The Philips unit is much easier to clean, both in the dies and in the entire machine. This is a big deal because "unclean = broken soon" in the quickly-solidifying world of pasta dough.

o The Philips has only a few dies -- a drawback -- where the CTC has many. Maybe they will make more available.

o The Phillips is a bit over-automated, some might say. By comparison, the CTC (where the cook decides everything) initially seems more flexible -- but, it is a trade-off and there is a reason: Philips does everything needed to complete its mix-knead-extrude-retract cycle so that you do not tend to leave dangerous clogs solidifying in the machine.

o One key thing for larger batches and wide noodles is the dough-kneading time. In the Philips, this seems fixed -- but if you actually read the manual, it does have the ability to vary dough mixing (kneading, in effect) time.

o You also need to experiment a bit in order to get a "feel" for what proper dough looks like in this machine -- a tablespoon of water, one way or the other makes a difference. It also has some variance in results between the single or double batch size -- that needs a bit of hands-on experience.

---

All in all, it makes pasta making pretty clean and easy. I still will use my manual machine for making wide noodles or Ravioli, so I will experiment with using bulk dough from the Philips unit as input to the manual extruder. The Philips unit is a winner, because it is well engineered and is convenient enough to use at the drop of a hat.

5.0 out of 5 stars A very good and complete Pasta Maker!
Reviewed in Canada on January 13, 2016
The Item comes as advertised! If you want to make fresh pasta but aren't sure how to do it, this is the appliance for you. It is very user friendly. Attach the pasta disk you want to make, pour in the flour. Pour in the water/egg. Press the timer and wait. That's it! in 15 minutes or 10 (depending on how much pasta you want to make) and it's ready! That simple. All you have to do now is prepare it in boiling water, add the sauce of your choice and enjoy fresh pasta.
Pro's: Easy to use, Easy to clean, Can make different types of pasta, Sturdy with a nice design. AND FRESH PASTA!
Con's: Not all the pasta is used in the appliance, A little heavy (which may be a good thing), Pricey, Pricey, Pricey.
I gave the item 5 stars because it is a very good appliance and as for the price, that's what it is for a good item.

4.0 out of 5 stars I really like this machine
Reviewed in Canada on December 13, 2015
I really like this machine. I work full-time and still do my best to provide my children homemade food as often as possible. This machine allows me to provide my children with another array of food made from scratch. I have only made the spaghetti so far, but coupled with homemade sauce, I have the peace of mind that I am feeding them with the best I can provide. A 600g batch of noodles was sufficient to feed 3 teenagers, 1 preteen and myself this afternoon.

In my attempts to make homemade pastas and noodles, I have collected the following:
1. Marcato manual crank extruder - which I love but requires mucho strength and determination to churn out the amount of pasta that a family of 6 can consume.
2. Marcato Atlas 150.
3. KitchenAid pasta rollers and cutters.
These were fine before but I knew I had to give up the practice of homemade pasta once I re-entered the workforce.

Thank goodness for the Philips Pasta Maker. It is an absolute dream.

While the clean up involves a bit of disassembling and a number of pieces, the ease in which they are cleaned is fantastic. Far easier that it would have been with my previous arsenal of pasta making equipment. In addition, I require less space in order to make pasta because all the mixing and shape forming happens within the machine vs. what is required from rolled pasta. The extruded noodles came out firm (benefits of extrusion versus cutting sheets) and on the dry side so there was no additional flouring required as they came out of the machine. I don't know about others, but I make a huge mess when flouring the rolled pasta sheets and cut noodles. Yuck. I would have to stop, clean and wipe up the flour from the pasta sheets, then do the same thing after I run the sheets through the cutters. The Philips eliminates all of that.

My only wish is that they had the asian noodle dies available here, particularly the thinner sheet die (0.8m vs. the North American version which is 1.2m) and the one that is pictured on the top left in this link https://www.itvsn.com.au/include/oecgi2.php/product?product=102793 . I looked into ordering it but shipping alone is 2x the cost of the die itself. Way too expensive. Considering the population of asians in North America, Philips should make these dies available here. That is the only reason why I can only give it 4 stars instead of 5.
