Next step is to get a good coffee maker that does a pre-soak of the grounds and brews at the right temperature. This one hits those marks - mostly. From what I've read, the temperature is not as consistent as it could be, and it does not have SCAA certification, which only a few machines do. When I was researching what to get, I came across the Technivorm, Behmor, and other models which DO have the SCAA certification, so they're pretty much guaranteed to make the "perfect" cuppa joe.
At the same time, while these high tech (and expensive) models focus on making a great cup of coffee, they usually do little else. I enjoy coffee in all its varieties, and the Ninja Coffee Bar attracted me with its promise of making a wide range of coffee products. It does NOT actually do Espresso, so you can't technically make things like Cafe Latte, Cappuccino, etc. But it does make a very concentrated 4oz or 8oz shot of coffee that can be used to make coffee drinks that are very similar.
Due to the many good reviews, I decided to give it a chance. And I'm very happy I did! First, the basic coffee it makes is excellent, and a distinct step up from my previous drip coffee maker. It's creates a richer, more flavorful brew, but without any additional bitterness, sourness, or overcooked notes. It does tend to make a strong drink, which I like, but if its too strong for your tastes you can either add a little water, or change your grind size to a bit coarser. The Cup size setting, on Classic brew, put out about 10oz of coffee, which was perfect for a standard size 12oz mug. The XL Cup, again on Classic brew, generated 13oz, which works well in some of my larger 14-15oz mugs. There are other settings for larger vessels like travel mugs, tumblers and carafes. And the other brew types give you less liquid, and a more cocentrated flavor, for use in other style drinks.
After being so pleased with the basic coffee, I had to try one of their specialty drinks. I went for the Cappuccino style drink. Again, they can't call it Cappuccino because the Ninja does not make Espresso, which is the base of Cappuccino. But I've had real Cappuccino at neighborhood coffee bars as well as Starbucks, so I had something to compare it to. The Ninja version requires you to heat 1/2 cup of milk in the microwave, froth it using the built-in frother (which does a great job), and then use their "4oz Specialty" cycle to brew a concentrated shot into the foamed milk. Again, I was really surprised at how good it was! Easily as good as anything I've had at a coffee bar. Despite the 1/2 cup of milk, it was full of robust coffee flavor with lots of nuances - a real taste delight!
So I'm definitely tickled to have the Ninja Coffee bar. It probably doesn't produce quite the connoisseur level coffee that a Technivorm would give you. But it does make a really excellent cup of coffee, while providing the tools to make a great variety of hot and cold drinks that will appeal to most coffee lovers. I highly recommend it!
However, we have adapted to the Ninja, and now won't go back. We brew the half-carafe, which makes about 3.5 cups of coffee. The coffee cost is a lot less, and you can brew basically anything rather than have to settle for what someone will put in a K-Cup. You can vary the strength, which you can't do with a K-Cup. You can froth milk and all that fancy stuff. It is quieter than a Keurig, important for early morning operations, and you can set a timer to come on in the morning. There is less waste / less environmentally unfriendly waste (grounds only). It's cheaper per cup, less than half the cost of a pod even for premium grounds. Importantly, for taste, it's better than a Keurig and you can customize the brew by adding more or less coffee.
Some things you need to know. I always brew in half-carafe mode. The first cup is as hot as a Keurig, but the thermal carafe will lose heat over an hour. At one hour, the coffee is still warm, but "asbestos throaters" will want to nuke it for 30 seconds. (I've been doing the hot-water-preheat-the-carafe technique, and that works really well.) As such, the half-carafe mode encourages me to drink more coffee. The carafe takes about 2.5 minutes to brew, which "amortizes" to less than a minute per cup. The system does not turn off by itself, wasting energy if you forget to turn it off. The reservoir is relatively small, so I'm refilling it after every brew from my Brita pitcher. The gold filter is all you need - very good coffee with minimum silt, and then there's a little bit only at the bottom of the carafe.
So should you buy this or buy a Keurig? If you like good coffee, quickly, aren't too cost conscious, and want minimal setup and prep, go with a Keurig. If you want more control over the process, often have 2, 3 people that want coffee all at once, want a much lower cost (and waste) per cup (not to mention, not supporting the cryptographic/proprietary debacle with the K cups from a few years ago... did they ever stop doing that?), want a "wake up pot" waiting for you in the morning, want a quieter overall process, want a simpler/less mechanical process with no needle that will clog over time with grounds, then go with the Ninja. You get a lot of nice bells and whistles with this unit.

I have changed my rating to two stars. after a year this thing is a mess. It leaks all the time, errors during brewing with means you need to turn it off, remove the water tank and push the little nozzle to get air out of the system. I want to love it but it is a big disappointment based on the price. This is not user error either... it seems the system works great for while then you start to notice it wont get through a brew cycle without error like a couple times a week..., then, every day.
