Shun“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection. Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see. |
Handcrafted in JapanShun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world. |
Knife Steel is EssentialHeat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process. |
NSF CertifiedShun Sora knives are NSF certified for use in commercial kitchens. The NSF develops health standards and certification programs that help maintain the very highest levels of food safety. |

Shun Sora
In Japanese, Sora means "sky." With Sora's proprietary Composite Blade Technology, this beautiful series offers sky-high value by bringing together a VG10 three-layer san mai cutting edge with a polished Japanese 420J stainless steel upper.
This technology puts high-performance material exactly where it's needed most - on the cutting edge.
Knife Handle
The Sora line features a traditional handle design with textured TPE which provides excellent grip, balance, and easy maintenance. Topped on the end of the handle is the Shun logo in stainless steel which enhances and balances the handle.
Composite Blade Technology
Sora uses Kai's proprietary Composite Blade technology to bring together a VG10 three-layer san mai cutting edge with a Japanese 420J stainless steel upper. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle.
Braze welding permanently joins them. The attractie wavy pattern at the join is based on traditional Japanese sword hamon lines.
Layered Steel
The Sora line features VG10 clad with a layer of stainless steel on each side to support and protect, then hand-sharpened to 16 degrees each side.
Shun and Sharpening
Shun are backed by Shun against manufacturing defects. In addition to supporting our products with this claim, we will be happy to sharpen your Shun or Kai knife for free for as long as you own the knife.

Product Description
Add THE must-have all-around food prep knife to your collection with the Shun Cutlery 8-inch Sora Chef's Knife. Also called a gyuto, this Japanese knife features a less curved blade than a western chef knife that contacts the cutting board along more of its length to cut more food with every slice. The Sora also has a gentle roll off the tip, so it needs to be lifted less and cutting is more efficient. The San Mai construction uses VG10 steel for a corrosion-resistant, razor-sharp 16-degree cutting edge supported by 420J stainless steel on the blade upper. The traditional, full-tang handle is made of a textured PP/TPE polymer blend to provide an easy-to-maintain, contemporary look and offer a strong, secure, balanced grip. In Japan, the blade is more than a tool – it's a tradition. Housed in Seki City, the heart of the Japanese cutlery industry, Shun Fine Cutlery is dedicated to maintaining this ancient tradition. Each knife is handcrafted by highly skilled artisans to produce blades of unparalleled quality and beauty. We also leverage modern, premium materials and state-of-the-art technology to provide Shun quality to millions of professional chefs and avid home cooks throughout the world.

Some people say they got rust spots on these knives. Well more expensive knives have a good side and a bad side. They are great because you get better blade profiles, with a blade that holds an edge a lot longer and is much easier to sharpen, but the down side is they are prone to rust. You shouldn't just leave these knives laying in a wet sink for days like you can do with cheaper knives. You should do that with any higher end knife because they will all get rust spots. Also I can not stress this enough. Do not put these knives in the dishwasher. When you finish using them. Hand wash them in soap and water. Hand dry them really good and put them back on your knife rack. Also make sure you knife isn't wet from placing wet knives on it. Putting your good knives on a wet knife rack is a good way to get rust spots. These really are great knives that are very easy to take care of with a little respect and a few steps, and these are possibly the best knives in the price range. These or the Messermeister Elites. Though the elites are a little more expensive than these. You will not regret buying these Soras'. Also if you purchase these. Get yourself a nice knife rack to display them. The beautifully crafted knives look way to go to be thrown in a knife block or drawer.
